Why can not use reverse osmosis to separate the alcohol from a fermented mash?
Breweries use distillation seems to carry out this task. Why can not reverse osmosis used instead?
In theory yes, but it would be difficult to separate the alcohol from other similar sized molecules, which could produce unwanted results. More to the point, however, is that reverse osmosis technology is expensive and demanding process, while distillation – especially alcohol – is well established, relatively simple, and above all more profitable technology. In other words, you do not want to pay many times more for the same product.
